How to scale a recipe up or down

Scale by yield or by a multiplier, ingredient by ingredient. Raising agents and seasoning get the correction nobody else applies.

The short answer

Divide the yield you want by the yield the recipe makes, then multiply every ingredient by that number. Past about 1.5x that stops being true for raising agents, salt and strong spice, which climb slower than the rest, so this tool eases them and tells you by how much.

Fill each case two thirds. Start checking at 18 minutes: a case this shallow sets in half the time a deep tin needs, and the gap between done and dry is small.

Tin and time

More batter needs more tin, and a round tin grows with the square of its width, so going up two inches is often more than the factor asks for. Keep the oven the same and judge by a clean skewer and a springy top, not the clock. Above 4x, mix in separate batches.

Weigh in grams, never cups, because a small error in the factor grows with every gram. Rows named as a raising agent, salt, spice or extract are eased above 1.5x and say so; everything else scales straight. Start under on seasoning and lift by taste, since it cannot be taken back out.

One tin 2 in deep filled half, at 60 g of batter a case filled two thirds. Double it for a two-layer recipe. Cupcakes go in at the same temperature as the cake, so only the time changes.

Scaling a recipe

Scaling is one number: what you need divided by what the recipe makes. Flour, sugar, butter, eggs and liquid follow it exactly. Raising agents, salt and strong spice do not, and that is what makes a scaled-up cake dome, crater and taste soapy.

The maths

One number does most of the work

The scale factor is the target yield divided by the original yield. Twelve to eighteen is 1.5, twenty-four to forty-eight is 2. Multiply flour, sugar, butter, eggs and liquid by it and weigh them on the scales, never in cups, because a small error in the factor grows with every gram. The rise

Raising agents do not scale linearly

This is the part that ruins a big cake, and no other scaling calculator handles it. A large batter has less surface for gas to escape from, so it holds more of what the baking powder makes and rises more per gram. Multiply the powder straight and the cake climbs too fast, craters in the middle and carries the soapy, metallic taste of bicarbonate that never reacted. Above 1.5x this tool eases the raising agents back: 13% under a straight multiply at 2x, 24% under at 4x. Below 1.5x, and every time you scale down, it leaves them alone and says so.

Salt and spice

Season under, then taste

Salt, cinnamon, mixed spice, ginger, clove and extracts ease more gently than the raising agents, about 10% under a straight multiply at 2x. Not because a big batch needs less salt in principle, but because a big batch is an expensive place to over-season and you cannot take it back out. Taste the batter and lift it if it needs it. A cake recipe converts straight to cupcakes

Any cake batter works as cupcakes. A standard case filled two thirds takes about 60 g, so the count is the batter weight divided by 60. Keep the oven exactly where the cake recipe says and change only the time: 18 to 22 minutes rather than 30 to 45, because a case that shallow sets fast. Do ingredients scale linearly?

Most do, two groups do not. Flour, sugar, butter, eggs and liquid scale straight at any factor. Raising agents and strong seasoning do not once you go past about 1.5x, because a bigger batter holds gas better and reads spice differently, so a straight multiply over-leavens and over-seasons. This tool eases those two groups and shows you by how much.

How much baking powder when doubling a recipe?

About 1.74 times the original, not 2. That is roughly 13% under a straight multiply, which is where published trade guidance for a doubled batch sits. On 2 teaspoons, use 3 and a half. Double it properly and the cake rises too fast, drops in the middle, and can taste soapy or metallic.

How do I scale a recipe up or down?

Keep the temperature the recipe gives and cut the time to about 18 to 22 minutes, from the 30 to 45 a cake takes. A cupcake case is shallow, so the middle sets long before a deep tin would. Start checking at 18 minutes with a skewer.

How much should I scale salt and spices?

A little under the full factor. Salt, strong spice and extracts start around 10% under a straight multiply at 2x and about 19% under at 4x. Taste the batter and lift them if it needs it, because a big batch is an expensive place to over-season and it cannot be taken back out.

Does bake time double when I double a recipe?

No. Bake time follows the depth of the tin, not the amount of batter. Keep the temperature the same and check for a clean skewer and a set top. A deeper tin takes longer, a wider shallow one is quicker, so start checking well before the original time is up.

Can I scale a recipe by more than 4x?

You can, but split it into separate batches. Most recipes scale cleanly to about 3x or 4x. Past that, one bowl overloads the mixer and the raising agents get unpredictable, so two batches of 4x beat one of 8x.
